Potato bhaji (Alu sabji)

Potato Bhaji (Alu sabji)




This Potato bhaji is a stuffing for Dosa.It is also eaten with chapati,puri and puranpoli.

Potato bhaji:-


Ingredients:-



4 medium potatoes 
1 big onion,sliced
1 inch ginger
8-10 garlic cloves
2 green chillies
4,5 curry leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp turmeric powder
salt to taste
a pinch of sugar(optional)
 coriander chopped, for garnishing

Method:- 

1.wash the potatoes and boil them in a pressure cooker/vessel.


2. Peel the potatoes.Cut them into cubes.

3. Slice the onions.Make a fine paste of ginger-garlic-green chillies,without water. (chillies can be cut into pieces and added instead of grinding in a paste.In that case,make a paste of garic-ginger only.) 

4.Heat oil in a kadhi/thick bottom vessel.When the oil is hot enough,add curry leaves and mustard seeds.

5 When they crackle,add cumin seeds,sliced onions and stir well.When translucent,add turmeric powder,stir and add potatoes.  

6. Add salt according to taste & a pinch of sugar,if wanted and mix well.

7.Cover with a lid and keep on low flame for 5 mins. 

8.Finally,garnish with chopped coriander.
