Bhindi Fry(Okra,Ladys finger) |
This easy,simple and quick version of Okra is ideal for kids.The taste of okra differ drastically depending on cooking method.For best results choose small,bright,green fresh okra for making subzi.
Ingredients:
1/2 kg Bhindi (lady finger ,okra)
4 green chillies cut into pieces
1/4 tsp mustard seeds
1/4 tsp cumin seeds
2,3 curry leaves(optional)
1 tbsp lemon juice or 2,3 pinches Amchur powder
2 or 3 tbsp oil
salt to taste
Method:
1. Wash Bhindi thoroughly with water and make each one dry by wiping with kitchen napkin.
2. Trim both the ends of each Bhindi.
3. Chop into 1 cm thick pieces.
4. Heat oil in a kadhi/wok/deep vessel on high flame. Add curryleaves (optional),mustard seeds,when they crackle,add cumin seeds.Add green chilli pieces.
5. Turn the flame to medium-low and add cut Bhindi into it and mix well.
6. Stir fry Bhindi on low flame.Do not add salt beforehand as Bhindi tends to shrink after cooking.
7. In the beginning,Bhindi becomes sticky. This stickiness vanishes eventually.But adding 1 tbsp of lemon juice will remove stickiness also and makes sabji tastier.Do not cover while cooking as it makes it mushy.
8. Keep stirring till it is done.Add salt as per taste.
9. Serve hot with chapati.
Tips:
Green chillies can be replaced with red chilli powder.
If you want,you may add finely chopped garlic pieces while tempering.
You can sprinkle chat masala over it while serving.
