Dodka Bhaji

Dodka Bhaji(ridge gourd)

This is a common vegetable specially made in maharastra.Dodka is also known as angular luffa or chinese okra.It has a subtle flavour.



Ingredients:-
2    dodka(ridge gourd)
4,5 garlic cloves,finely chopped
1/2 tsp jeera(cumin seeds)
1    tbsp roasted peanut (finely ground)powder
1.5  tsp kanda-lasun masala(or 1 tsp     red chilli powder+ 1/2 tsp goda/garam masala)
2   tsp oil
salt to taste
Method:-
1. Lightly peel dodka with peeler so as to remove hard veins.Not too much.
2. Cut them into 2 inch long pieces.Take another cut vertically giving 2 slits but without breaking them (like + sign)
3. In a plate,mix peanut(groundnut) powder,masala,salt.
4. Stuff this powder mixture into cut  dodka pieces.
5. In a wok/kadhai,heat the oil.Add jeera, let it splutter.Add garlic pieces,stir for 2 mins.
6. Carefully put stuffed  dodka into it. Add 3 tbsp water in it & cover it with a lid. Let it cook on low flame for  10-15 mins.
7. If more gravy is needed,add more water,but don't make it watery,as it will spoil the taste.The gravy should be thick/semi-thick. Serve with chapati/bhakri.
